The Sonora farm has been owned by the Alberto Guardia family for over a century. Almost from the very beginning, it has been among the Specialty coffees and is constantly evolving. Currently, more than 20 different varieties of coffee are grown on the farm, among them H1 roasted by us, commonly known as Centramericano there. This variety of coffee is very efficient and resistant to coffee rust, and is characterized by an above-average richness of flavor.

All types of coffee grown on the Sonora farm are harvested and processed separately. Our micro-lot is grain harvested by hand and then released into water channels to eliminate floaters (defective grains). The fruit in the shells is placed on black tarpaulins and dried for 12 days, and then they spend 3 days lying in the warehouse, to be finally dried in a mechanical dryer at a temperature not exceeding 35 degrees. After being removed from the dryer, the grains are aged again, and after 2 months they are finally inspected.

The natural method of processing means that the coffee brewed with our beans will have a pleasantly high body and its aftertaste will remain on the palate for a long time. There are notes of sweet pineapple in it and a wine green apple that gives the infusion a delicate acidity. Distinct sweetness is given by the notes of cane sugar and sweet grapes that we managed to get out of the beans. A must for all lovers of naturals. Lots of sweets, high body, nice sweet finish. It couldn't be better.
