Similar to the wet method, the coffee cherries are placed in a special mill and the skin and part (not all, as in the wet method) of the pulp are removed. The rest of the pulp remains on the bean and the coffee is dried in this form. This method gives the coffee a high degree of sweetness and a delicate, perfectly balanced acidity.
