More beans from Ethiopia - another temptation for the senses... An infusion of beans from the Beloya farm in the Yirgacheffe region is a real deal! The wet processing makes the flavour profile very clean and expressive. It has sweet notes of apricot, pleasantly spicy and citrusy verbena, as well as the expressive bergamot aroma of Earl Grey tea.

Ethiopian coffee trees are selected from an incredibly rich variety of trees growing wild in local forests and transplanted to small gardens where specific varieties are already grown. Farmers sort the ripe coffee berries by hand.
The coffee beans are separated from the pulp using an Agaarde 5-disc depulper and wet fermented for 24 to 36 hours. After sorting by density, the coffee is washed in clean water and left to dry on African beds for 1-2 weeks. After drying, the coffee is passed through a sieve 14 times to remove any fruit residue and impurities.
Beloya, Harfusa and Koke are part of the Yirgacheffe Coffee Farmers Cooperative Union (YCFCU), a network of cooperatives in the Yirgacheffe region. The farmers are known for their meticulous care in processing the beans. The Beloya station uses water from the nearby Bondé River. The river is regularly monitored to ensure it is clean.
As part of the cooperative's mission to support the local YCFCU community, the primary school buildings have recently been renovated and equipped with new science materials.
