How to welcome spring? With JAVA and Java! The beans of our SPRING Espresso are Java Caturra, which is a natural mutation of the Javanica variety, which appeared at the turn of 2004/2005. Java Caturra owes its name to the fact that its trees are small and dense - similar to Caturra, but the shape of the fruit resembles the elongated fruit of Javanika. What are the benefits of this mutation?
Java Caturra is a variety resistant to coffee rust and drought (Javanica does not have these features), and its yields are up to 15% higher than those of Caturra. In addition, thanks to the mutation, the flavor profile of this variety is much better than the other two coffees. Advantages only!
Ripe coffee berries, after being picked, are selected in water channels and then they are stripped of their flesh using as little water as possible. The beans are then fermented for 36 hours in special tanks designed for dry fermentation, which makes it easier to remove the shell during the next washing. Finally, the coffee is dried on special tarpaulins that ensure proper air circulation.
Thanks to the wet process, the cup of SPRING Espresso impresses with its crisp taste. It is delicate and pleasantly acidic on the tongue. We can feel the notes of mirabelle and sweet orange in chocolate, as well as the aroma of molasses. The perfect balance between acidity and sweetness makes it impossible to end up with just one espresso.
