This is the formal definition of speciality coffee, which represents only about 4% of all coffees available on the market. Choosing the right beans

In our roastery, we source coffee beans only from trusted distributors with plantations in places like Guatemala, Brazil, India, Colombia, and New Guinea. These farms are organic, aided by their high altitude (usually over 1200 meters above sea level). Coffee cherries are harvested by hand, allowing for the elimination of unripe or imperfect fruits right at the start. This is the initial selection, after which the beans undergo several other quality tests, including a blind test, where only defect-free beans pass. Another requirement for producing the highest quality coffee is the precise roasting process and delivering the beans to the customer as quickly as possible after roasting. In our roastery, this means a maximum of 4 days, ensuring the coffee retains its maximum freshness.
