Develop your sensory skills and evaluate coffee with greater precision

Sensory Advanced Individual Training is an advanced one-to-one coffee sensory evaluation course. It is designed for people who already have foundational cupping experience and want to identify differences between samples more accurately, describe flavour with greater confidence and develop their sensory memory.

Under the guidance of a JAVA University trainer, you will explore professional sensory testing methods, practise calibration using reference samples and learn how to avoid common errors that can affect coffee evaluation. You will also take part in a professional cupping session and a triangle test designed to assess your ability to detect even subtle differences between samples.

What will you learn?

You will develop your ability to recognise flavours and aromas and evaluate their intensity with greater precision. You will learn which factors can interfere with sensory analysis and how to minimise the effects of suggestion, sample order and sensory fatigue on your final assessment.

Working with basic taste solutions, the Le Nez du Café aroma kit and reference samples will help you strengthen your sensory memory and communicate your impressions more precisely. Practical exercises will also allow you to evaluate the consistency and repeatability of your assessments.

The training takes place at our dedicated training center, JAVA University, located inside the JAVA Coffee Roasters roastery building. It is a space created especially for training participants — filled with the aroma of coffee and positive energy.

We are equipped with top-class coffee brewing equipment, including the Storm Barista Attitude espresso machine — the official machine of the World Barista Championships for 2022–2025.

Meet Your Trainer

The training is led by Michał Żmuda — a barista with 10 years of experience and a JAVA University trainer.

Michał has completed the full professional path — from barista, through head barista, to trainer. He learned from Polish and World Champions in both coffee brewing and roasting.

He holds SCA certifications in barista skills and sensory analysis, and his experience includes participation in numerous competitions, such as:
