Myanmar A Lel Chaung is a coffee that proves from the very first sip that it deserves attention. Not only because of its clean, focused flavour profile. This is a natural coffee with exceptional clarity, featuring pronounced cherry sweetness, layered with notes of plum, pomelo, and warm spices – like a homemade fruit compote from childhood, but reimagined in a specialty form.

In the heart of Shan State, in the small village of A Lel Chaung, coffee is more than just cultivation—it's about community, shared responsibility, and full commitment to every stage of production. This group was created thanks to the work of 180 families belonging to the Shwe Taung Thu group, whose name literally translates to "Golden Farmer."

The Ywangan region is located at an altitude of approximately 1,282 meters above sea level, and its climate and soil are ideal for producing naturally processed coffees. It's one of the few areas in Southeast Asia where coffee cultivation goes hand in hand with biodiversity conservation—Myanmar still has the largest areas of tropical rainforest in the region.

Processing begins with the hand-harvesting of ripe cherries, which are then sorted by three rotating six-person teams. It's the attention to detail at every stage—from selection to 17 days of drying on raised beds—that produces a result you can truly feel in your cup.

It's worth noting that over 60% of the people working with this coffee are women—they are most often responsible for cherry selection and drying. The Shwe Taung Thu Group prioritizes the development of local communities and genuine support—not only in terms of production, but also in access to knowledge, technology, and markets.

Myanmar A Lel Chaung is a natural with surprising purity and a very "structured" fruitiness. Cherry and plum immediately emerge in the aroma, reminiscent of a thick compote or jam, but without being overly fermented. The coffee's flavor is sweet, juicy, and pleasantly concentrated, with a distinct fruity center and an elegant, citrusy pomelo accent that adds lightness.

Spices - cinnamon and cardamom - enter the finish, giving it a "winter brew" character, but in a very special way: clean, clear, and without heaviness. This filter blends the fruity intensity of a natural with clarity and good structure, making it perfect for both V60 and batch brew.

How to brew coffee using the V60 method

  • Dose: 18–19 g
  • Grinding: 24–27 clicks (Comandante)
  • Water: 300 g, 93–98°C
  • Brewing time: approx. 3:00 min

1. Pour hot water over the filter

2. Add coffee, start the timer

3. Add 60 g of water, stir, wait 30 seconds

4. Add water every 30 seconds: 120 g, 180 g, 240 g, 300 g.

5. The whole process should be completed in approx. 3 minutes
