Washed grain processing method

Today, we’d like to focus on the coffee processing method called "washed." The washed process is the most widespread and well-known method. It is primarily used in tropical countries where frequent rainfall makes natural processing difficult. In the washed or wet method, large amounts of water are used, up to 7,000 liters, which is essential for the success of this process.

Once the ripe coffee cherries are handpicked, they are placed into a special machine that separates the beans from the fruit. The beans are then soaked in water, where the remaining pulp falls off naturally. Fermentation also occurs at this stage. After the pulp is fully separated from the seeds, the beans are dried in the sun or shade. Coffees processed by the washed method typically have higher acidity than naturally processed coffees. Their aroma reveals floral, citrus, and tea-like notes. These coffees are more complex in flavor and considered more distinctive, offering a range of fruity acidity.

Thanks to their unique, vibrant, and balanced notes, washed coffees are fantastic without any additives like milk or sugar. In our selection, you’ll find many single-origin coffees processed using the washed method. However, there is one seasonal coffee that has particularly caught our attention.

Interestingly, it is possible to use two processing methods on the same farm. While climate conditions play a crucial role, they are not an absolute rule. If there happens to be a dry season in a given area, there is no reason why both natural and washed processing methods can’t be applied. JAVA Coffee has previously offered coffees from the same farm, processed using both methods. This allowed coffee enthusiasts to explore the differences between the natural and washed methods.
