TRAINING PROGRAM:*
Day I
- Sensory exercise - concentrations of basic tastes
- Training with aromas Le nez du cafe
- Sensory analysis: cupping roasted coffee for espresso
- Adjusting the grinder for coffee of different roast levels
- Manipulating espresso parameters and their impact on extraction
- Perfecting milk frothing techniques
- Latte art: various techniques
Duration: 5h.
Day II
- Brewing espresso with different ratios
- Developing optimal espresso recipes
- Explanation of terms %TDS and %EXT
- Introduction to advanced latte art techniques: heart, tulip, rosetta, multi-patterns
- Preparing basic milk coffees: cappuccino, latte, latte macchiato, flat white, cortado.
Duration: 4-5h.
