Linden honey, orange, rooibos, peanuts – China Gui Ben is a coffee that doesn’t try to be exotic, because it simply is. It comes from southern Yunnan, where the climate, soil, and farmers’ approach give it something of tea, something of dessert, and something of a moment when you don’t have to do anything at all.

The Xishuangbanna region, located at the crossroads of China, Laos, and Myanmar, has long been known primarily for Pu-erh tea. Today, however, it’s also a place where coffee is gaining distinct character and recognition. Gui Ben is a project run by the Tian Cai and Tang Xiang family, who not only manage their own farm but also purchase cherries from neighboring growers and process them at their own station.

This lot was processed using the honey method – the cherries are dry-pulped and then sun-dried for nearly a month with part of the mucilage left on the beans. This approach enhances the coffee’s sweetness, gives it a smoother body, and adds a distinct texture. It’s a process that demands patience and skill, allowing the natural complexity and depth of the beans’ flavor to fully develop.

There’s a lot happening in the cup – it starts with linden honey and orange, followed by rooibos with a gentle herbal undertone, and finishes with a note of peanuts that keeps the profile balanced. The coffee is smooth but never dull. Complex, yet approachable. It carries the elegance and clarity typical of coffees from southern Yunnan, with a subtle tea-like character and creamy texture. In pour-over methods, it shows an excellent balance between sweetness and freshness – perfect for everyday brewing without compromise. An ideal choice for a morning ritual or a calm moment during the day.

How to brew coffee using the V60 method

  • Dose: 18–19 g
  • Grinding: 24–27 clicks (Comandante)
  • Water: 300 g, 93–98°C
  • Brewing time: approx. 3:00 min

1. Pour hot water over the filter

2. Add coffee, start the timer

3. Add 60 g of water, stir, wait 30 seconds

4. Add water every 30 seconds: 120 g, 180 g, 240 g, 300 g.

5. The whole process should be completed in approx. 3 minutes
