Specialty Coffee Costa Rica Don Claudio

Cashew nuts, red orange, chocolate — Don Claudio is a coffee with a classic profile and a subtle twist. Elegant, but never stiff. Sweet, yet with a citrus edge. Its story begins in Costa Rica, but it tastes just as good wherever you drink it — as long as it’s brewed as a filter. Behind this coffee stands CoopeAgri, a cooperative bringing together over 3,700 small farmers. Only around 300 of them meet the strict requirements allowing their coffee to carry the Don Claudio name. This distinction honours not only quality, but also history — Don Claudio was the cooperative’s first president in 1962, and his legacy is still alive in the Pérez Zeledón region in southern San José.

Behind Costa Rica Don Claudio coffee is the CoopeAgri cooperative, operating in the Pérez Zeledón region in the southern province of San José. It is one of the most important agricultural organizations in this part of Costa Rica, bringing together over 3,700 small-scale coffee producers. Only about 300 of them meet the rigorous quality requirements that allow their coffee to be marked with the Don Claudio seal – a distinction awarded to the best batches.

The project's name commemorates Don Claudio, the cooperative's first president in 1962. He remains an important symbol of the cooperation, quality, and community upon which CoopeAgri is built. For local farmers, it's not just history but real values ​​that continue to shape their work and approach to coffee.

Coffee cherries are hand-picked from September to February and delivered to the mill the same day—nighttime processing begins in the evening. This batch has been honey-processed, which leaves some of the pulp on the beans during fermentation and drying. This gives the coffee its natural sweetness, creamy body, and clean, balanced profile. After drying, the beans are carefully sorted and prepared for export, maintaining full quality control at every stage.

Don Claudio is not just coffee—it's also a community. The cooperative invests in a coffee school for young people, a subsidized health clinic, a housing fund, and a pension system. This is coffee from a place where collaboration truly matters.

First, cashews – delicate, buttery, and creamy. Then, blood orange introduces juiciness and a slight acidity. The whole thing is completed by a chocolate finish – deep but not heavy. This is a coffee that doesn't impress in the first seconds, but develops with every sip. And it stays with you for a long time.

This illustration really happened. Our illustrator's dog got his hands on a coffee grinder and decided it was the perfect toy. Without question, without hesitation – simply the best thing within reach. There's something very everyday and very real about it. Coffee isn't always a ritual meticulously crafted down to the last detail. Sometimes it's a moment of chaos, laughter, and "okay, later."

We left this illustration exactly as it appeared in the story: tongue-in-cheek, without tweaking, without forcing meaning. Because good coffee is also about life happening nearby – with the dog under the table, the grinder in its paws, and the cup waiting to be served.

How to brew coffee using the V60 method

Dose: 18–20 g · Water: 300 g, 90–96°C · Grinding: 24–27 clicks (Comandante) · Brewing time: approx. 3:00 min

  1. Rinse the filter with hot water, discard the rinse water
  2. Add ground coffee
  3. Pour 60 g of water, start the timer, stir, wait 30 seconds
  4. Continue pouring every 30 s: 120 g, 180 g, 240 g, 300 g
  5. Total brew time should be around 3 minutes.
