Black Diamond is a coffee that matures slowly – like a fine wine. The beans undergo a long, anaerobic fermentation, during which the fruit rests in its own juice, gaining depth and sweetness. Then, for more than 25 days, they dry in the shade until their skin darkens like a black diamond. The result is a profile of remarkable intensity: dense and liqueur-like, with notes of chocolate, plum, and cane sugar, balanced by citrus freshness. Las Lajas is a pioneering micromill in Costa Rica's Central Valley, run by Oscar and Franciscia Chacón, producers who have redefined the approach to natural coffee processing in Central America. It is here, at the El Cañal farm, that one of their most refined coffees is produced – Las Lajas Black Diamond, known for its long anaerobic fermentation and deep, liqueur-like profile.

Quality control stage during coffee bean processing

In this process, everything happens slower, more carefully, and with greater precision. Hand-picked, the cherries ripen in anaerobic tanks for 48–96 hours, then dry for over 25 days in the shade. During this time, they darken—hence the name "Black Diamond"—and the flavor develops deep notes of chocolate liqueur, ripe plums, and cane sugar, offset by citrus freshness.

Michał Żmuda, coffee trainer at JAVA University, on Black Diamond:

"Black Diamond Natural is a processing method where classic natural meets complete fermentation control and patient drying. The berries are placed in oxygen-free tanks where they ripen in their own juice for 48–96 hours, gaining depth and sweetness. Then they are dried slowly, in the shade, for 25–30 days – until their skin darkens.

The result? A coffee with a dense, liqueur-like body, with notes of rum, dried fruit, and chocolate. Compared to regular natural, Black Diamond offers a more intense, more "mature" experience – less wild fruitiness, more elegance and depth." Where natural can be luscious and sunny, Black Diamond is dark, sensual, and sublime—a coffee that tastes more like an evening after work than a morning before.

Technically, the difference is that Black Diamond ferments in an anaerobic environment at 18–22°C, while classic natural ferments freely, in contact with air. Furthermore, Black Diamond's drying process takes about 10 days longer and is performed at a lower temperature (35–40°C), allowing for a deeper, more concentrated flavor profile.

How to brew coffee using the V60 method

  • Dose: 18–19 g
  • Grinding: 24–27 clicks (Comandante)
  • Water: 300 g, 93–98°C
  • Brewing time: approx. 3:00 min

1. Pour hot water over the filter

2. Add coffee, start the timer

3. Add 60 g of water, stir, wait 30 seconds

4. Add water every 30 seconds: 120 g, 180 g, 240 g, 300 g.

5. The whole process should be completed in approx. 3 minutes
