Group Alternative Brewing Basic – aroma, balance, precision

Alternative brewing methods are more than just a trend — they are a way to unlock the full potential of the coffee bean and consciously build flavor in the cup.

In a small group setting, we will guide you through the basics of specialty coffee and the world of pour-over methods. You will learn how to read coffee packaging like a barista, how to adjust key brewing parameters, and why even small changes can completely transform the character of the brew.

After the training, you will clearly understand how grind size, ratio, water temperature, and water quality affect flavor, and you will learn to brew coffee using different methods: from V60 and Aeropress to Chemex.

If you love coffee and want to start brewing it consciously using alternative methods — this training is made for you!

What awaits you during the training? Program:

  • What is specialty coffee?
  • Overview of coffee processing methods
  • Analysis of basic information found on coffee packaging such as altitude, botanical variety, and flavor profile
  • Differences between classic and alternative brewing methods
  • Discussion of parameters affecting brew flavor such as grind size, ratio, water temperature, and water quality
  • Differences between immersion and percolation brewing methods
  • Explanation of %TDS and %EXT
  • Basic techniques of alternative brewing methods: V60, Aeropress, Chemex, Syphon, French Press, Clever Dripper

  • Group training format – more affordable than individual sessions, with the same amount of knowledge and attention
  • Small group = more hands-on practice and individual approach
  • Classes take place on Saturdays

There will be time to test, compare, and discover nuances that are invisible in a rush — because alternative brewing begins where routine ends.

How to prepare for the training?

  • Have a good breakfast – it will help you absorb knowledge more effectively
  • Manage your caffeine level – you know best whether coffee before the training is a good idea for you
  • Get a good night’s sleep and come with an open mind – a solid dose of knowledge awaits you!
  • Avoid strong perfumes – they may interfere with sensory analysis
  • Dress comfortably – comfort is key.

Location — JAVA University

The training takes place at our dedicated training center, JAVA University, located inside the JAVA Coffee Roasters roastery building. It is a space created especially for training participants — filled with the aroma of coffee and positive energy.

We are equipped with top-class coffee brewing equipment, including the Storm Barista Attitude espresso machine — the official machine of the World Barista Championships for 2022–2025.

Meet Your Trainer

The training is led by Michał Żmuda — a barista with 10 years of experience and a JAVA University trainer.

Michał has completed the full professional path — from barista, through head barista, to trainer. He learned from Polish and World Champions in both coffee brewing and roasting.

He holds SCA certifications in barista skills and sensory analysis, and his experience includes participation in numerous competitions, such as:
