Alternative Brewing Basic Group Training – aroma, balance, precision

Alternative brewing methods are more than a trend — they are a way to unlock the full potential of the bean and build flavour in the cup with intention.

In a small group we'll take you through the fundamentals of specialty coffee and the world of pour-over brewing. You'll learn how to read a coffee bag like a barista, how to dial in the key brewing parameters, and why even small adjustments can completely transform the character of your brew.

By the end of the training you'll understand exactly how grind size, ratio, temperature, and water quality affect flavour — and you'll know how to brew using multiple methods: from V60, through Aeropress, to Chemex.

If you love coffee and want to start brewing it consciously using alternative methods — this training is for you.

What's included in the training? Programme:

  • Coffee varieties
  • Bean to cup road
  • Coffee processing methods
  • Reading coffee bag information: growing altitude, botanical variety, sensory profile
  • Differences between dark and light roast profiles
  • Brewing parameters and their effect on flavour: grind size, ratio, temperature, and water quality
  • Differences between immersion and percolation brews
  • Fundamentals of sensory analysis
  • Understanding %TDS and %EXT
  • Core brewing techniques for alternative methods.

Language note: this group training is conducted in Polish. For an English-language session, please book the individual training or contact us directly.

  • Group format – more accessible than individual sessions, with the same depth of knowledge and attention

There will be time to test, compare, and discover nuances that get lost in the rush — because alternative brewing begins where automation ends.

  • 250g of light roast filter coffee.

How to prepare for the training?

  • Take a good breakfast – it will help you absorb knowledge more effectively
  • Manage your caffeine level – you know best whether coffee before the training is a good idea for you
  • Get a good night’s sleep and come with an open mind – a solid dose of knowledge awaits you!
  • Avoid strong perfumes – they may interfere with sensory analysis
  • Dress comfortably – comfort is key.

Location — JAVA University

The training takes place at our dedicated training center, JAVA University, located inside the JAVA Coffee Roasters roastery building. It is a space created especially for training participants — filled with the aroma of coffee and positive energy.

We are equipped with top-class coffee brewing equipment, including the Storm Barista Attitude espresso machine — the official machine of the World Barista Championships for 2022–2025.

Meet Your Trainer

The training is led by Michał Żmuda — a barista with 10 years of experience and a JAVA University trainer.

Michał has completed the full professional path — from barista, through head barista, to trainer. He learned from Polish and World Champions in both coffee brewing and roasting.

He holds SCA certifications in barista skills and sensory analysis, and his experience includes participation in numerous competitions, such as:
