Whenever coffee from Papua New Guinea arrives at our roastery, we know something special is waiting for us. This time it’s Kindeng Mill – Natural, an exceptional lot from the Western Highlands region. Naturally processed coffees from Papua New Guinea are still quite rare, and that’s exactly what makes this one stand out — full of character, complexity, and authenticity without trying too hard. Kindeng Mill Natural is a coffee for those looking beyond the usual flavor profiles — layered, vibrant, and full of surprises. In the cup, it balances sweetness with wine-like fruit acidity, finishing with a long, chocolatey aftertaste.

Papua New Guinea's Kindeng Mill Natural hails from the Western Highlands—one of the country's most distinctive coffee regions, where mountainous terrain, a cool climate, and fertile soils create ideal conditions for growing specialty coffee. This batch is produced through the collaboration of approximately 1,500 smallholder farmers from the Kindeng and Arufa areas, who cultivate coffee on small, family-owned farms of 1-2 hectares. In Papua New Guinea, coffee often grows alongside other crops, playing an important role in the daily lives of local communities. This is a coffee that, from the very beginning, carries the authenticity of place and the work of many hands.

Slow drying of fruit is the key to depth of flavor and natural sweetness.

This batch has been naturally processed—a method that requires time, precision, and extensive experience. Only ripe fruit is selected for drying, and it dries uncut on raised beds for approximately 3–4 weeks. During this time, it is regularly moved by hand to ensure even drying and stable moisture throughout the batch. It is this process that builds the intense sweetness, depth, and fruity complexity that bring notes of dried forest fruits, chocolate, white wine, and melon to the cup.

Papua New Guinea Kindeng Mill Natural is a coffee with a distinctive, juicy, and multi-layered profile that reveals its natural processing from the very beginning. The intense sweetness of dried forest fruits and ripe melon emerges at first, lending the infusion a succulent and soft, fruity depth.

A chocolate base builds in the background, bringing order to the entire profile and creating a pleasant, fuller body. A winey, elegant acidity reminiscent of white wine rounds it all off—slightly fermented, lively, yet well-balanced. This is a coffee with great dynamics: sweet, fruity, and complex, yet clean and very harmonious. In the pour-over, it reveals a long, dessert-like finish that lingers long after the last sip.

How to brew coffee using the V60 method

Dose: 18–20 g · Water: 300 g, 90–96°C · Grinding: 24–27 clicks (Comandante) · Brewing time: approx. 3:00 min

  1. Rinse the filter with hot water, discard the rinse water
  2. Add ground coffee
  3. Pour 60 g of water, start the timer, stir, wait 30 seconds
  4. Continue pouring every 30 s: 120 g, 180 g, 240 g, 300 g
  5. Total brew time should be around 3 minutes.
