Honduras Montecillos is a filter coffee that combines the calm of the Honduran mountains with the precision of modern processing. The cherries ripen slowly in the shade of the Montecillos reserve, developing natural sweetness and a clean, deep profile. In the cup, it is juicy, smooth, and distinctly fruity: quince, plum, and green apple dominate, giving the brew freshness and elegance. The overall profile remains harmonious and clean, with gentle natural sweetness and a pleasant, long-lasting finish. It's a calm, precise, and highly drinkable filter — ideal for mindful, everyday brewing.

Honduras Montecillos hails from southwestern Honduras, in the La Paz region, near the Montecillos Reserve—a mountainous and humid area that favors slow ripening. The plantations are located at an altitude of 1,450–1,600 meters above sea level, under natural tree shade, resulting in lower yields but higher flavor potential. CONEXH, a group of local producers, is responsible for preparing the batches and overseeing quality from harvest (December–March) to processing at nearby mills.

This batch underwent aerobic volcano natural fermentation—natural fermentation under controlled oxygen conditions. The cherries are dried whole, preserving the skin and pulp, but this is not a spontaneous process: air access is deliberate, and fermentation is conducted with purity and precision in mind. The microclimate of Montecillos—with less direct light and the presence of volcanic soil—allows the beans to dry slowly, allowing the flavor to develop deeply. This allows the coffee to retain its intense sweetness, fruitiness, and velvety texture.

In the cup, Honduras Montecillos opens with bright, juicy fruitiness. The first note is quince – aromatic, slightly floral, and full of crisp sweetness. Plum follows closely behind, lending the coffee a smoothness and a ripe, rounded character. The whole is brought together by notes of green apple, which introduce a crisp acidity and distinct freshness, emphasizing the clarity of the profile. It's a clean, elegant, and highly drinkable flavor – juicy, light, yet memorable thanks to its distinct, natural fruit.

How to brew coffee using the V60 method

  • Dose: 18–19 g
  • Grinding: 24–27 clicks (Comandante)
  • Water: 300 g, 93–98°C
  • Brewing time: approx. 3:00 min

1. Pour hot water over the filter

2. Add coffee, start the timer

3. Add 60 g of water, stir, wait 30 seconds

4. Add water every 30 seconds: 120 g, 180 g, 240 g, 300 g.

5. The whole process should be completed in approx. 3 minutes
