Winter Espresso is a bean selected for winter espresso—pure, precise, and with a profile that remains stable even in short, intense extractions. The washed process emphasizes the clarity of flavor: plum, almond, and a subtle touch of spices emerge in the cup, building a natural sweetness and a calm, wintery depth. In a short espresso, it produces a compact, structured profile, and when combined with milk, it retains elegance, creating a subtle dessert effect.

This coffee carries well at lower temperatures—stable, consistent, and predictably flavorful. In a pairing, it makes a great complement to the light, fruity Itumpi, creating a perfect pairing for mindful, winter drinking.

About the Bean Origins

The beans for this year's Winter Espresso come from San Pedro La Laguna, Guatemala—a place known for the unique microclimate of Lake Atitlán and the surrounding volcanoes. The farms are located at an altitude of 1,500–1,900 meters above sea level, where the cool "Xocomil" wind prolongs cherry ripening, imbuing the coffee with purity and natural sweetness.

Local farmers, primarily from the Tz'utujil Maya community, work on small plots of fertile, volcanic soil. They cultivate classic Arabica varieties—Typica, Bourbon, Caturra, and Catuai—with harvesting taking place from October to March. The beans undergo a full washing process, ensuring a consistent, clear character. Thanks to a partnership with COUNISA, San Pedro La Laguna coffee is supplied to specialty roasters, including JAVA.

Specialty Coffee Tanzania Itumpi [Filter | Drip] 250 g

Tanzania Itumpi is December's Coffee of the Month, bringing lightness and energy to a time when winter days can weigh down the flavor. The beans come from the Itumpi AMCOS cooperative in the Songwe (Mbozi) region, from plantations located at an altitude of 1500–1700 meters above sea level. This fully washed Arabica is known for its exceptional clarity and stable profile. This batch presents itself exceptionally fresh in the filter: rhubarb, gooseberry, lemon, and a herbal tea accent create a bright, juicy infusion.

This is a coffee that offers a "December reset"—it invigorates, brightens, and pairs well with short, cold days. At the same time, it perfectly demonstrates how a single bean can transform with the roast profile: here, it's light, fruity, yet still rooted in the Itumpi character and the work of local producers. In this set, it serves as a cold, everyday filter—one that tastes good no matter how fast winter rolls by.

Informacje o farmie

The Itumpi AMCOS cooperative has been operating in its current form since 1994, although its origins date back to the 1970s, when it operated under the name "Ujamaa." From a small group of 56 members, it has grown to include 160 farmers actively supplying their crops. A key milestone came in 2019, when the company began producing fully washed coffees—a move that significantly improved quality and allowed it to enter the specialty market. Harvested cherries are brought to the processing plant in the afternoon, where they are pulped in the evening and fermented overnight. The beans then dry in the sun for about a week, giving them the clean, consistent character typical of southwestern Tanzania. Thanks to the cooperative's consistent work, each batch is refined, and farmers can cultivate their crops while remaining true to traditional methods.

Soft and creamy, made with our Brazil Maracana, they have the true aroma of specialty coffee, not an artificial "coffee" aftertaste. This is a traditional coffee fudge: smooth, buttery, slightly caramelly, with a subtle hint of chocolate and nuts, naturally resulting from the profile of Brazilian beans.

Each package contains 20 pieces, and each fudge weighs approximately 13g.
