Farm and process information
Guji – once an underappreciated corner of the coffee world, today one of the hottest regions in Ethiopia. Here, on fertile volcanic soils, grow the local varieties known as Ethiopian Heirloom. The terroir favors coffees of remarkable clarity and distinctive character. But behind these beans stands not only a place – but also a man whose story gives this coffee its true identity.

Behind this coffee is Haile Gebre – a grower, visionary, and a man who wasn’t afraid to start over. After years spent in exile and in the military, he returned to Guji to establish Shakisso Farm – the region’s first professional plantation. Here he also founded a processing station that today supports more than 300 local farmers. The result? Coffee with character and a real impact on the development of the local community.

What is the CO₂ method?
What sets this coffee apart from other decafs happens not on the farm, but after harvest. The beans are sent to Europe, where they undergo decaffeination using supercritical carbon dioxide. Sounds complex? Maybe a bit – but the principle is simple: CO₂ precisely “captures” caffeine molecules while leaving untouched those responsible for flavor and aroma. No harsh chemicals, no high heat, no compromises. The result is clean, full beans, ready to be roasted in a way that preserves maximum character in the cup.

How does this coffee taste?
Ethiopia Shakisso Decaf can surprise you – right from the first sip. In the cup, you’ll find lime zest, a distinct chocolate base, and the elegant bitterness of black tea. A clean, balanced, and classy profile. As espresso, it shows another side – dense, intense, and velvety sweet. We roast our coffees on an ongoing basis - you will receive beans roasted up to 10 days in advance.
