Specialty Coffee Guatemala San Pedro La Laguna [Winter Espresso]

Winter Espresso was created exactly for this time of year – when the days get shorter faster, coffee disappears from the cup more often, and every sip is meant to mean a little more than usual. This espresso is clean, sweet and well-structured, with a flavour profile that doesn’t dominate but fits perfectly into the winter rhythm: from the first “kickstart” coffee in the morning, through quick shots between tasks, to a calm cappuccino in the evening. We chose it with winter in mind: a coffee that is reliable, predictably tasty and ready for any situation. It’s not a holiday blend, but a single origin with a place, story and character – an espresso worth getting to know before you dive into the details.

This year's Winter Espresso hails from San Pedro La Laguna in Guatemala, a region situated on Lake Atitlán and surrounded by three volcanoes: Atitlán, Tolimán, and San Pedro. It's one of those areas where the climate and the farmers' daily work rhythm directly influence the flavor in the cup. The plantations are located at an altitude of 1,500–1,900 meters above sea level, and thanks to the cool "Xocomil" winds, the fruit ripens slowly and evenly. The result is a coffee with a pure character, with natural sweetness and a structured fruitiness.

Washed treatment in San Pedro La Laguna

Most of the local producers are indigenous Tz'utujil Maya farmers, working on small plots of land in fertile, volcanic soil. They cultivate Typica, Bourbon, Caturra, and Catuai varieties, with harvesting taking place from October to March. The coffee is fully washed, preserving its clarity and consistency. COUNISA is responsible for introducing these micro-plantations to the specialty market, allowing beans from San Pedro La Laguna to be distributed to roasters like JAVA.

We chose this flight because it lends itself well to winter: it's stable, transparent, and predictably tasty, whether you're brewing a short espresso or a flat white. It doesn't dictate the mood, but it doesn't spoil it—it leaves room for your own daily rhythm and acts as a coffee you can reach for without hesitation. This espresso opens with a hint of plum—sweet, dark, and slightly juicy. In the background, almond smoothness and a subtle touch of spices emerge, emphasizing its winter character without adding heaviness. The profile is clean and balanced: sweet enough to drink on its own and bold enough to work well in milk-based coffees. When combined with milk, it creates a slightly dessert-like effect, still casual and light. This espresso combines the clarity of washed processing with a soft fruitiness, creating a profile perfect for December—calm, stable, and always delicious.
