In January, coffee stops being an attraction. It becomes part of the day — the morning, work, a short break in between. That’s exactly why we chose a coffee that doesn’t need extra framing or long explanations. Asman Gayo Mill is a single origin from northern Sumatra that presents the region in a clean, well-structured way. No heaviness, no earthy notes Sumatra is sometimes known for. It’s a coffee that is clear, balanced, and predictable in the best possible sense — one you quickly grow accustomed to.

Local farmers working with Asman Gayo Mill

The beans are processed by Asman Gayo Mill, a small mill run by Asman Arianto, a producer and Cup of Excellence winner. The mill collaborates with a group of small, local farmers from the surrounding villages of Pantan Musara. Many of these farms have been rebuilt after previous natural disasters, and coffee has become a new foundation for stability and development for the local community.

Unlike most Sumatra coffees, which are traditionally processed using the wet-hulled method (giling basah), Asman Gayo Mill specializes in washed processing. In the humid, mountainous climate of northern Sumatra, this process requires great precision and patience. The cherries arrive at the mill as fresh cherries, where they are depulped, fermented in open tanks, and then thoroughly washed and dried on raised tables and in solar dryers.

The coffee opens with notes of pomelo and lemon—fresh yet structured, without harsh acidity. A caramel sweetness emerges in the middle, softening the overall flavor and making it enjoyable even in the afternoon. The finish is rounded off by delicate spices—warm and calm, present more as a backdrop than a dominant accent. The overall flavor is smooth, clean, and uncluttered.

The pour-over coffee emphasizes its clarity and citrus freshness, making it an everyday choice for longer drinking. The espresso is more focused, based on caramel and spice, with a clean, structured finish. Two roast profiles allow you to tailor your coffee to your daily routine.

How to brew coffee using the V60 method

  3. Wlej 60 g wody, zamieszaj, odczekaj 30 s.
  4. Dolewaj wodę co 30 s: 120 g, 180 g, 240 g, 300 g.
  5. Całość powinna zakończyć się w ok. 3 minutach
