- come directly from the farmer, allowing its origin and cultivation method to be fully verified.

Roasting guidelines
The quality of specialty coffee is determined by both the raw bean and the roasting process. In our selection, you'll find primarily light-roasted coffees, best suited for pour-over methods, as well as medium and dark roasted coffees – ideal for espresso machines and moka pots. A lighter roast allows the beans to reveal their true aromas. Mass-market coffees are typically dark-roasted to mask their defects, which is why they tend to taste primarily bitter. Before specialty coffee beans are roasted, they are subjected to tests, specifically a process known as cupping, to compare samples. This process identifies beans with the most potential. It's also worth mentioning that specialty coffee is freshly roasted. This refers to both the freshness of the beans, meaning their harvest dates, and the roasting itself, which should occur shortly before brewing. The longer roasted coffee sits, the less intense its flavor becomes. That's why we send our coffees to customers no later than 4 days after roasting.
