Naturally processed yet beautifully balanced, it leaves behind a clean aftertaste and an appetite for another sip.

A processing station amidst the green hills of the Gedeo region

Congo coffee comes from the Gedeo region, located near Yirgacheffe—one of Ethiopia's most prized coffee-growing areas. The beans are sourced from small-scale farmers in the Congolese kebele, whose small farms are located at altitudes of 1,900–2,080 meters above sea level. Kudume, Dega, and Welishu coffee trees grow in a semi-forest environment, surrounded by lush vegetation and shade trees. Thanks to the high altitude, the coffee ripens slowly, developing a distinct sweetness and a complex profile.

Hand-harvesting ripe coffee cherries in the Congo

This lot was produced by small-scale producers in the Congolese kebele and processed at the Teshomes Konga Wet Mill, a partnership with SNAP. Natural processing is key here—ripe, hand-picked cherries are dried whole on raised tables, regularly turned to ensure even fermentation. This stage builds the fruity intensity and sweetness, while maintaining the purity typical of well-executed Ethiopian processing.

In the cup, Konga reflects the character of its origin with clarity and balance. Lime comes first, bringing a bright citrus freshness. It is followed by hard candy sweetness – a clean, confectionery note developed during natural processing, without any heaviness or overripe character. As the coffee opens up, blueberry adds juiciness and deeper fruit complexity. A subtle nutty note rounds out the texture and leads into a smooth, composed finish.

Roasted specifically for filter brewing, Konga allows the natural process to remain expressive without overpowering the coffee’s origin. It performs best as a pour-over, where its layered profile and balance of freshness and sweetness become most distinct. This is a refined, technically precise Ethiopian natural that delivers clean and consistent results across different filter brewing methods.

How to brew coffee using the V60 method

Dose: 18–20 g · Water: 300 g, 90–96°C · Grinding: 24–27 clicks (Comandante) · Brewing time: approx. 3:00 min

  1. Rinse the filter with hot water, discard the rinse water
  2. Add ground coffee
  3. Pour 60 g of water, start the timer, stir, wait 30 seconds
  4. Continue pouring every 30 s: 120 g, 180 g, 240 g, 300 g
  5. Total brew time should be around 3 minutes.
