This coffee earned its place in our range as the result of years of experience, patience and an unwavering commitment to quality. It comes from high in the Peruvian Andes, where Tiburcio Alarcon and Maria Rivas have cultivated coffee for generations on their small, three-hectare Pinoyqu farm, working in harmony with nature. At 2,190 metres above sea level, in the cool mountain climate of the Incahuasi Valley, they grow Geisha Inca – a variety prized for its elegance and complexity, yet one that requires patience and precision at every stage of production.

Peru's Tiburcio Alarcon hails from a small Pinoyqu farm located in the Incahuasi Valley, in the Cusco region. At an altitude of 2,190 meters above sea level, Tiburcio Alarcon and Maria Rivas cultivate just three hectares of coffee trees, focusing on quality over quantity. Their Geisha Inca is a demanding variety, producing low yields, but rewarding them with extraordinary elegance and a complex sensory profile. As members of the Incahuasi Cooperative, they have been developing their cultivation methods for years, sharing their knowledge with other producers in keeping with the Andean tradition of collaboration and mutual support.

Drying coffee on tables after 32 hours of fermentation Dry Honey

Although technically a washed coffee, its uniqueness begins much earlier. Freshly picked cherries ferment within their own pulp without the addition of water for 32 hours—a process known as Dry Honey Fermentation, which brings out the beans' greater complexity and natural fruitiness. Only after fermentation is the coffee washed and dried for approximately ten days on raised tables, where cool mountain air ensures even flavor development. The result is an exceptionally pure, harmonious cup, where every decision made on the farm is reflected in the final coffee profile.

Peru's Tiburcio Alarcon is a unique Geisha Inca that captivates with its elegance, purity, and refined, tropical character. The cup opens with juicy notes of dried mango and ripe apricot, which blend harmoniously with sweet pineapple, creating an incredibly complex and well-balanced profile. Its silky body, high clarity, and long, fruity finish allow each sip to reveal further layers of flavor. This coffee perfectly demonstrates why Geisha is one of the most prized varieties in the specialty world – it delights with subtlety, precision, and exceptional elegance.

How to brew coffee using the V60 method

Dose: 18–20 g · Water: 300 g, 90–96°C · Grinding: 24–27 clicks (Comandante) · Brewing time: approx. 3:00 min

  1. Rinse the filter with hot water, discard the rinse water
  2. Add ground coffee
  3. Pour 60 g of water, start the timer, stir, wait 30 seconds
  4. Continue pouring every 30 s: 120 g, 180 g, 240 g, 300 g
  5. Total brew time should be around 3 minutes.
