The process of receiving and selecting coffee cherries at the Rungeto cooperative.

The individual factories comprising the Rungeto FCS came to prominence following the closure of the renowned Ngiriama cooperative, which held numerous assets and held significant sway in the region. Following its liquidation, the Karimikui farm merged with Kii and Kiangoi to form the Rungeto Agricultural Cooperative, and in 1997, coffee processing was reopened within the cooperative. At the Karmikui farm, coffee cherries are hand-picked and then sorted before being stripped of their pulp. After the pulp is removed, the beans ferment overnight within their parchment casings. They are then sorted and dried on African beds for 8-14 days, depending on weather conditions.

The factories within the Rungeto cooperative are constantly modernized. Each is adapted to the needs that arise throughout their development. Innovations are introduced at the same pace, ensuring consistent product quality from each mill. One such step was the tiling of all washing channels and fermentation tanks, which significantly improves the quality of the final product and makes them easier to maintain. Furthermore, in each factory, water from cherry washing is reused, for example, for watering the plants, significantly reducing water consumption.

The delicate sweetness of apple adds harmony and juiciness, giving this coffee a lightness that lingers on the palate long after drinking. Precise washing makes every sip exceptionally clear and elegant. This coffee demonstrates the precision of Kenya from Kirinyaga's taste.

How to brew coffee using the V60 method

  • Dose: 18–19 g
  • Grinding: 24–27 clicks (Comandante)
  • Water: 300 g, 93–98°C
  • Brewing time: approx. 3:00 min

1. Pour hot water over the filter

2. Add coffee, start the timer

3. Add 60 g of water, stir, wait 30 seconds

4. Add water every 30 seconds: 120 g, 180 g, 240 g, 300 g.

5. The whole process should be completed in approx. 3 minutes
