Specialty Coffee Mexico Donaldo Ambrosio

In southern Mexico, near the Guatemalan border, among the mountains of the Sierra Madre de Chiapas, a coffee is produced with a clean profile, delicate body, and an intriguing structure. Mexico Donaldo Ambrosio is a filter coffee defined by calm precision and the taste of a place where coffee is part of everyday life. In the cup, it is clean and elegant: juicy blackberries lead the profile, supported by wine-like, tropical juiciness, with a subtle chocolate base in the background. The light, soft body and clear structure allow the flavor to develop smoothly and precisely, without heaviness or excess.

Donaldo Ambrosio Garcia's farm is located in the Amatenango de la Frontera region, at an altitude of 1,500–1,550 meters above sea level, where conditions are ideal: volcanic soils, a mountain climate, natural shade, and hand-selected crops. Donaldo is a member of the SIPROCAFE cooperative, which brings together local producers committed to sustainable cultivation and high-quality raw materials.

Ripe coffee cherries are hand-picked on a farm in the Chiapas region.

This batch is dominated by Bourbon and Garnica varieties – a local, less common variety created from a cross between Mundo Novo and Caturra, developed by INMECAFE in the 1960s. This gives the coffee an interesting balance between classic sweetness and a herbal-fruity twist. The washed process adds clarity and elegance. There's a lot going on in the brew – but without chaos.

Mexico Donaldo Ambrosio is a coffee with a clean, elegant profile and a calm complexity. Juicy blackberry appears on the first sip, giving the infusion a fruity freshness and a slightly winey character. A moment later, milk chocolate rounds out the flavor, introducing a delicate sweetness and creaminess.

Notes of tropical fruit develop in the middle of the cup – subtle, unadulterated, leaning more towards ripeness than sharp acidity. A slightly winey, tea-like impression ties everything together, giving the coffee depth and ensuring a long-lasting flavor.

This balanced and transparent profile, without heaviness or aggressive acidity, is ideal for those who appreciate a clear filter, a soft body, and an elegant, clean finish. Pour-over coffee demonstrates its precision, while cold brewing reveals even more juiciness and freshness.

How to brew coffee using the V60 method

  • Dose: 18–19 g
  • Grinding: 24–27 clicks (Comandante)
  • Water: 300 g, 93–98°C
  • Brewing time: approx. 3:00 min

1. Pour hot water over the filter

2. Add coffee, start the timer

3. Add 60 g of water, stir, wait 30 seconds

4. Add water every 30 seconds: 120 g, 180 g, 240 g, 300 g.

5. The whole process should be completed in approx. 3 minutes
