How is specialty decaffeinated coffee made?

Specialty decaffeinated coffee is still high-quality coffee classified in the premium segment, but its caffeine content is significantly reduced compared to regular coffee. The process of removing caffeine, a stimulating substance naturally found in coffee, can be done in various ways: using carbon dioxide, water and green coffee extract, or through the Sugarcane E.A. method. All these methods are completely natural, so they do not cause any harmful changes to the carefully selected coffee beans. Their goal is only to remove enough caffeine so that there is about 2-3 mg of it in the brewed cup (for comparison, a cup of espresso contains about 200 mg of caffeine). What is the process of decaffeination?

The method of decaffeinating coffee beans, used for our decaffeinated Colombia Cauca, is known as the Sugarcane E.A. process. First, after selecting high-quality beans, the coffee cherries are subjected to steam, which opens the pores on their surface, allowing caffeine to be released. Next, the beans are placed in water with ethyl acetate (E.A) - an organic compound. This substance bonds with caffeine, allowing for more precise extraction. Finally, the beans are exposed to steam again to remove any remaining ethyl acetate. The further processing of the beans is the same as for other coffees, including drying, polishing, and finally roasting in the oven - no more than 7 days before shipping to the customer.

What does specialty decaffeinated coffee taste like?

Specialty decaffeinated coffee is milder in taste than regular coffee. It's important to note that after removing caffeine, the brew no longer has stimulating properties, energy-boosting effects, or digestive benefits. Instead, it is richer in minerals and a great source of antioxidants, which means it still has positive effects on those who, for various reasons, cannot drink caffeinated coffee. Decaf, as we call coffee after the decaffeination process, does not differ significantly from regular coffee in terms of taste or aroma. Much depends on the type of coffee being used, as different factors influence the sensory profile of the beans. How does our decaf coffee fare?

Both roasts are Specialty Arabica beans of the Castillo variety from the Cauca region of Colombia. We source the beans from several small growers who cultivate coffee at an altitude of 1600-1820 meters above sea level. It is also recommended for people with acid reflux, as caffeine directly affects the symptoms of this condition.
