A taste of early September mornings

September brings quieter mornings, cooler air and a natural return to familiar daily rituals. Burundi Burunga fits beautifully into this time of year, combining juicy blackberry and cherry with the sweetness of ripe fig and a light, tea-like finish. It is vibrant and full of flavour, yet elegant, balanced and remarkably clean. Burunga is steadily earning its place on the specialty coffee map, showcasing the harmony and subtle fruit character associated with Burundi’s finest coffees. As our Coffee of the Month for September, it is available in two roast profiles – filter and espresso.

Burundi Burunga hails from the southern part of the country, encompassing the areas of Bururi, Makamba, and Rumonge. Coffee trees grow on gentle hills descending towards Lake Tanganyika, at an altitude of 1,600–1,800 meters above sea level. Producer Muraho, who collaborates with local, small-scale family farms, is responsible for preparing this batch. The mineral-rich volcanic soils, regular rainfall, and mild climate favor the slow ripening of the Red Bourbon variety, prized for its natural sweetness, elegant acidity, and fruity character.

After harvest, the ripe berries are transported to a local processing station, where they undergo the classic Fully Washed process. First, they are carefully sorted and then de-pulped. The beans undergo controlled fermentation, are thoroughly washed, and dried to the appropriate moisture level. This method preserves the purity and clarity of the infusion, highlighting the juiciness of the blackberries and cherries, the sweetness of the figs, and the delicate, tea-like finish characteristic of this coffee. A good variety. Fertile soil. Ripe berries. And people who have known for generations the right time to harvest.

Burundi Burunga has a clean, elegant profile with a distinct fruity sweetness. Juicy blackberry and ripe cherry dominate the foreground, bringing a pleasant, vibrant acidity. As the brew temperature drops, the sweetness of fig emerges, giving the coffee greater depth and softness. A delicate, tea-like finish completes the overall experience, leaving the cup light, harmonious, and very pleasant to drink.

When roasted under filter, the coffee reveals more juiciness, freshness, and a tea-like lightness. In espresso, it becomes fuller and more concentrated – the cherry intensifies, the blackberry resembles a dark fruit juice, and the fig highlights the natural sweetness of the brew.

How to brew coffee using the V60 method

Dose: 18–20 g · Water: 300 g at 90–96°C · Grind size: 24–27 clicks on a Comandante grinder · Brew time: approx. 3 minutes

  1. Rinse the filter with hot water, then discard the rinse water from the server.
  2. Add the ground coffee.
  3. Start the timer and pour in 60 g of water. Stir gently and wait for 30 seconds.
  4. Continue pouring every 30 seconds, reaching a total weight of: 120 g, 180 g, 240 g and finally 300 g.
  5. The total brew time should be approximately 3 minutes.
