A farmer from the Mérida region – this is where the story of this coffee begins

The coffee comes from the Mérida region in the Venezuelan Andes – a place with a long tradition of coffee cultivation and exceptional natural conditions. Elevations ranging from 1,200 to 1,650 meters above sea level, fertile soils, and a mountainous climate promote slow ripening, resulting in a more complex flavor. The beans are then transported to a processing station in Santa Cruz de Mora, where small-scale local farmers deliver their harvest. Their work and dedication are the foundation for the restoration of the quality of Venezuelan coffee, which nearly disappeared from the international market just a few years ago.

The people behind the quality – local farmers from Mérida

Harvesting is carried out by hand, with an emphasis on selecting only ripe fruit. The process begins with sorting in water, which removes lighter, unripe cherries and impurities. The fruit is then depulped and fermented for approximately 18 hours, achieving a clean and structured profile. After thorough washing, the beans are sorted by density and size (SCR 18), ensuring uniformity and consistent quality in the cup. This classic, refined washed process highlights the coffee's natural character and clarity.

In the cup, this coffee forms a clean, harmonious profile, perfectly suited to pour-over methods. From the first sip, the distinct, citrusy freshness of pomelo emerges, lending the overall flavor a lightness and juiciness—particularly noticeable in a V60 or Chemex.

Over time, a natural, soft raisin sweetness develops, building a smooth, pleasant body. A subtle note of walnut rounds out the overall profile, bringing order to the profile and lending it a calm, classic character. This is a coffee of high clarity and excellent balance—exactly what you expect from a well-brewed pour-over.

How to brew coffee using the V60 method

Dose: 18–20 g · Water: 300 g, 90–96°C · Grinding: 24–27 clicks (Comandante) · Brewing time: approx. 3:00 min

  1. Rinse the filter with hot water, discard the rinse water
  2. Add ground coffee
  3. Pour 60 g of water, start the timer, stir, wait 30 seconds
  4. Continue pouring every 30 s: 120 g, 180 g, 240 g, 300 g
  5. Total brew time should be around 3 minutes.
