Specialty Coffee China Fuyan

Coffee from China may still come as a surprise, but the Yunnan region has been steadily establishing its position on the specialty coffee scene for years. Fuyan is a single origin from southwestern China, from the mountainous Menglian area, where coffee matures at an altitude of 1600–1700 m a.s.l. under favorable, fertile conditions. The flavor profile offers a clear sweetness of brown sugar, juicy pear, chocolate depth, and a lightly dry, fresh cranberry finish. This is a coffee that shows how dynamically and consciously the Chinese specialty scene is developing — built on the work of dedicated producers and well-considered processing decisions.

Mr. Li and Mrs. Na, who run the Fuyan farm and processing station, are responsible for this flight. Mr. Li is originally from Yunnan and moved with his family to the Menglian region as a teenager. Before turning to coffee, he worked in rubber cultivation and later in the tea industry—his experience working with tea still has a significant impact on how coffee is produced.

Fuyan isn't just a coffee farm: alongside coffee, high-quality specialty tea is also grown here, and the entire farm functions as a complex ecosystem. Fuyan is a prime example of the dynamic development of China's specialty coffee scene. Behind this coffee lies a specific farm, the consistent work of producers, and conscious process decisions.

The plantation covers approximately 80 acres of mountainous terrain. Between the coffee trees grow macadamia trees, fruit trees, and leguminous plants that provide natural shade. This environment has a direct influence on both farming practices and the character of the coffee itself. The variety grown is Catimor (P3 / P4), well adapted to local climatic conditions. Harvesting is done by hand from December to March, after which the selected cherries undergo natural processing.

The process is carefully controlled: after sorting, the cherries ferment in sealed bags for about a week and are then dried on raised beds before hulling. This approach preserves aromatic intensity while maintaining a clean, well-defined profile.

In the cup, brown sugar takes the lead, building a stable, clearly sweet foundation from the very first sip and giving the coffee a smooth, rounded mouthfeel. Shortly after, pear emerges — ripe, juicy and soft, without any green sharpness, bringing natural fruitiness and a lightly creamy texture. In the mid-palate, chocolate develops, tying the profile together, adding depth and structure to the brew. The finish belongs to cranberry — fresh and gently dry, with subtle acidity that balances the sweetness, refreshes the palate and leaves a long, clean, well-defined aftertaste.

How to brew coffee using the V60 method

  • Dose: 18–19 g
  • Grinding: 24–27 clicks (Comandante)
  • Water: 300 g, 93–98°C
  • Brewing time: approx. 3:00 min

1. Pour hot water over the filter

2. Add coffee, start the timer

3. Add 60 g of water, stir, wait 30 seconds

4. Add water every 30 seconds: 120 g, 180 g, 240 g, 300 g.

5. The whole process should be completed in approx. 3 minutes
