To choose the best coffee beans, opt for specialty coffee, which is 100% Arabica with the right parameters. At JAVA Coffee, we use only this type of bean. It is a product of the highest quality, representing only 4% of all coffee harvests. For coffee to be classified as specialty, the beans must score at least 80 out of 100 in tests conducted by professional Q-graders. Coffee plants are grown on small plantations located in high-altitude regions. This allows for the avoidance of excessive chemical pesticides in cultivation, and since the work on plantations must be done traditionally, hand-picking allows for the selection of only ripe and fully healthy fruits. These beans are then further inspected for defects before being processed. Our coffees are sourced from places like Guatemala, Honduras, Ethiopia, Brazil, Colombia, Costa Rica, and India. The samples we receive are roasted in various ways, testing different roast levels until the best result is achieved. With coffee, even a few seconds of heat treatment can affect the final outcome, so although we’ve been in the market for 23 years, we measure our experience by the number of roasters used.

Roasting coffee aims to release its flavor and aroma. Most of these qualities are released within about three days after roasting. During this time, the coffee undergoes “aeration,” which enhances its flavor. Proper roasting brings out the coffee’s sensory profile, such as chocolatey, sweet, nutty, floral, or fruity notes.
