In simple terms, light roast coffee beans are roasted at temperatures ranging from about 204 to 210 degrees Celsius, although the temperature fluctuates throughout the process, which is relatively short and stops when the desired effect is achieved. The roasted beans have a color close to light brown or cinnamon. In light roasting, not much essential oil is released from the beans, which keeps the surface dry.

Light roast beans are characterized by the highest level of acidity, a completely natural and highly desirable trait. It should not be confused with sourness, which is usually the result of improper roasting, incorrect brewing, or defective beans. Acidity refers to very subtle flavor characteristics, which can be compared to citrus fruits, apples, cherries, or other fruits. Light roast coffee also has very rich and diverse sensory features, which is why it is often used in cup tasting. Generally, there are no dominant bitter notes, but a lot depends on the type of beans and the brewing method. This coffee can be brewed in various ways, including in a drip, Chemex, AeroPress, or French press. It’s also worth noting that high-quality beans will taste great even when simply brewed in a cup. Our specialty coffees undergo rigorous testing, ensuring they are free from defects and meet the highest production standards. Their beans are subject to specialized processing, with the roasting process being a crucial step. The foundation lies in careful selection, as it is necessary to meet a range of standards. Once the beans arrive at the roastery, they are placed in one of our roasters and roasted until the desired sensory profile is achieved. In our store, we also offer medium roast and dark roast beans. The subsequent phases give the beans their final aromatic and flavor properties, after which they are quickly cooled in a cooling drum. The roasting process is also subject to strict control and final analysis to ensure the desired consistency in subsequent batches.
The right sensory profile
We package our coffees in airtight zipper bags that guarantee the preservation of the full sensory profile of the beans for at least three months after roasting. In this way, they retain their complex aroma and flavor for a long time, rich in diverse and pleasant notes. Our products are roasted in small batches and on an ongoing basis, no more than 7 days before shipment.
