A Delicate and Balanced Coffee from Southern Mexico

From the Sierra Sur mountains of Oaxaca – where mist drifts through the forests and winding roads overlook coffee-covered hillsides – comes a coffee that reflects both the craftsmanship of local producers and the unique character of its terroir. Ozolotepec is not a single farm but a community of coffee growers from the villages of San Francisco, San Juan, and Santa Cruz, where coffee has been cultivated for generations beneath the shade of avocado and banana trees. The result is a clean and balanced filter coffee, combining bright orange notes with the tea-like elegance of chamomile, all rounded off by a gentle chocolate sweetness. It is a coffee made for slow brewing and for discovering new layers of flavour with every cup.

Mexico Ozolotepec coffee by JAVA Coffee Roasters served with freshly brewed filter coffee

Discover the taste of Oaxaca’s highlands – a coffee crafted by local producers, defined by bright citrus notes, tea-like elegance, and a delicate chocolate sweetness.

A local coffee producer at work on a plantation in Sierra Sur.

The coffee comes from farms located at 1,400–1,800 metres above sea level, a broad altitude range that contributes to its complexity and rich flavour profile. The varieties grown here – Pluma Hidalgo, Typica, and Bourbon – are prized for their elegant acidity, natural sweetness, and refined cup character. In the cool mountain climate of Sierra Sur, coffee cherries mature slowly, developing greater depth of flavour and aromatic complexity. Harvesting is carried out entirely by hand, with producers carefully selecting only the ripest cherries. After picking, the coffee undergoes 20–24 hours of fermentation, followed by washing and 8–12 days of drying on patios and raised drying beds, often in the shade. This meticulous approach helps preserve the coffee’s clarity and balance, resulting in a clean and expressive cup with notes of orange, tea, chamomile, and chocolate.

Washing and sorting beans after harvest in the Oaxaca region

Ozolotepec is not a single farm, but a community of coffee producers from the villages of San Francisco, San Juan, and Santa Cruz in the mountainous Sierra Sur region of Oaxaca. For generations, local families have cultivated coffee beneath the shade of avocado and banana trees, relying on knowledge and farming traditions passed down over time. Despite the challenges brought by Hurricane Agatha in 2022, which caused significant damage across the region, producers rebuilt their farms and continued their commitment to quality coffee production. Their dedication and resilience are reflected in every cup, showcasing the unique character, local heritage, and remarkable terroir of southern Mexico.

Mexico Ozolotepec is a coffee defined by its exceptional clarity and balance. From the very first sip, bright notes of sweet orange bring freshness and vibrancy to the cup. As the coffee cools, delicate hints of chamomile and black tea begin to emerge, adding elegance and a refined tea-like character. The experience is rounded out by a gentle milk chocolate sweetness that lingers pleasantly on the finish.

On the cupping table, this coffee stands out for its high clarity, medium body, and excellent balance between fruit-driven acidity and sweetness. The acidity is vibrant yet approachable, seamlessly integrated into the overall profile. Rather than relying on intensity, Mexico Ozolotepec impresses through its elegance, cleanliness, and understated complexity, making it a coffee that remains engaging from the first sip to the last.
