Blackcurrant, peach and toffee – a flavour shaped by collaboration

Rwanda Cocatu is a coffee with much more behind it than a beautiful flavour profile. Its story begins in the Tumba Mountains, where 260 smallholder farming families work together to improve their crops and find better ways of producing coffee. Once harvested, the ripe cherries are delivered to Kinini Washing Station, where careful processing brings out vibrant notes of blackcurrant, juicy peach and the rich sweetness of toffee. Behind this coffee are 260 farming families who show that great coffee is rarely the work of one person. It is created when people share knowledge, solve problems together and remain committed to quality at every stage.

Cocatu Cooperative was founded in 2007 by just twenty farmers. Over time, it grew rapidly, bringing together as many as 6,000 smallholder coffee producers. The global financial crisis brought this period of growth to an end, forcing some farms to leave coffee production and the cooperative to find a new way forward. Today, Cocatu represents around 260 small farms located high in the Tumba Mountains. At elevations above 1,800 metres, farmers carefully tend their coffee trees and hand-pick only the ripe cherries. Behind every bean are months of daily work, generations of farming experience and a shared commitment to quality.

In 2017, the farmers made an important decision: instead of investing in their own processing facility, they partnered with Kinini Washing Station, one of the region’s most highly regarded washing stations. This allowed them to focus on growing high-quality coffee while entrusting processing and quality control to the experienced Kinini team. The freshly harvested cherries are delivered to the station on the same day, where they are carefully sorted and cleaned before undergoing dry fermentation, followed by fermentation in clean water. After soaking, the beans are dried on raised beds, regularly turned and protected from the strongest sunlight. Every stage requires patience, care and precision to preserve the coffee’s clean notes of blackcurrant, juicy peach and sweet toffee.

This coffee is juicy, clean and full of natural sweetness. Blackcurrant brings a lively fruit-forward freshness, balanced by the soft, succulent character of ripe peach. As the coffee cools, it becomes even sweeter, revealing smooth, creamy notes of toffee. Its light, silky body allows the flavours to flow seamlessly into one another. A long, sweet finish invites you to take another sip. Harmonious and wonderfully easy to enjoy, this coffee shines in filter brewing methods, which bring out its vibrant fruit character.

How to brew coffee using the V60 method

Dose: 18–20 g · Water: 300 g, 90–96°C · Grinding: 24–27 clicks (Comandante) · Brewing time: approx. 3:00 min

  1. Rinse the filter with hot water, discard the rinse water
  2. Add ground coffee
  3. Pour 60 g of water, start the timer, stir, wait 30 seconds
  4. Continue pouring every 30 s: 120 g, 180 g, 240 g, 300 g
  5. Total brew time should be around 3 minutes.
