Not every coffee stays with us for long. Some arrive in tiny quantities and are available for just a brief moment. Bourbon Sidra from Hacienda Venecia is one of those coffees. This variety accounts for only 1% of the farm’s total production, making each lot naturally small and limited. It’s one of those coffees whose rarity begins long before it reaches your cup. That’s exactly what our Limited Edition is all about — rare varieties, small lots and distinctive coffees whose next harvest may never taste quite the same. Hacienda Venecia is located near Manizales, in Colombia’s Caldas region – an area with generations of coffee-growing tradition. The farm has remained in the hands of the same family for more than 100 years, with coffee knowledge and expertise passed down through four generations.

Coffee trees grow on mountain slopes surrounded by natural vegetation and native shade trees. But Hacienda Venecia is much more than a coffee farm – the entire production process is managed on-site, from harvesting and cherry selection to fermentation, drying and quality evaluation.

For Bourbon Sidra, processing plays a particularly important role. This lot underwent Aerobic Natural processing – fermentation in the presence of oxygen, followed by natural processing and drying the coffee cherries whole. The goal wasn’t to create the most intense fermentation possible. Instead, the process was chosen to preserve a balance between sweetness and acidity while allowing Sidra’s distinctive character to shine through.

This approach reflects the philosophy at Hacienda Venecia: tradition is a starting point, not a limitation. Alongside classic methods, the farm experiments with varieties and fermentation techniques, looking for the processes that best complement each particular coffee.

The first impression is apple gummies – a distinct fruity sweetness paired with a pleasant, juicy acidity. As the coffee cools, it develops a more mature character, revealing notes of red wine that add depth and a subtle vinous quality.

The profile is rounded out by dark chocolate – neither heavy nor bitter, but adding fuller body and a long, sweet finish. It’s a complex yet beautifully cohesive cup: juicy at first, vinous through the middle and chocolatey on the finish. Here, Bourbon Sidra shows its more expressive side – plenty of fruit and sweetness, while maintaining balance and clarity in the cup.

How to brew coffee using the V60 method

Dose: 18–20 g · Water: 300 g, 90–96°C · Grinding: 24–27 clicks (Comandante) · Brewing time: approx. 3:00 min

  1. Rinse the filter with hot water, discard the rinse water
  2. Add ground coffee
  3. Pour 60 g of water, start the timer, stir, wait 30 seconds
  4. Continue pouring every 30 s: 120 g, 180 g, 240 g, 300 g
  5. Total brew time should be around 3 minutes.
