December Coffee of the Month is always a challenge. Should we go for winter-holiday flavors like raisins, chocolate, and nuts, or counterbalance with fruity vibes? This year, we combine both! Our December Costa Rica offers high nougat sweetness complemented by the dry aroma of cocoa, evoking cozy winter evenings. On the other hand, it also surprises with sunny mango notes and a pleasant lime acidity. A super balanced coffee with delightful sweetness and relatively light body. COSTA RICA ASOPROAAA is impressive both as filter coffee and espresso.

Processing Method
Our beans underwent Black Honey processing, meaning they retained a significant amount of fruity pulp and mucilage after initial cleaning. The drying process was relatively long and took place in a humid environment. Beans processed this way exhibit an intense flavor, distinctiveness, and high sweetness. The coffee is dried on raised beds under constant monitoring to prevent mold or excessive fermentation.
