October’s Coffee of the Month, from a Bolivian forest

In some places, it’s hard to tell where the coffee farm ends and the forest begins. In Bolivia’s Larecaja region, coffee grows beneath tall shade trees, with room for birds and other wildlife all around. This is where our October Coffee of the Month comes from. In the cup, expect chocolate, distinct apple notes and gentle fruit sweetness. There’s some acidity too, but it never takes over. It’s an easy coffee to enjoy every day, especially as summer gives way to autumn.

Bolivia La Paz comes from families who belong to APCERL and grow coffee in seven communities in the valleys of Madidi National Park. Here, coffee plants grow beneath the shade of trees, and the farms look more like part of the forest than neat rows of crops. This approach provides a livelihood for local producers while helping preserve habitat for birds and other wildlife. APCERL holds organic certification and the Bird Friendly designation.

APCERL has been certified organic since 2002. In 2014, the association also received the Bird Friendly designation awarded by the Smithsonian. After harvest, the coffee cherries are processed on the same day. The beans are separated from the fruit, fermented for 12–18 hours, then washed and dried. This classic washed process brings out the coffee’s clean, balanced character. In the cup, chocolate sweetness meets juicy apple and a gentle hint of apricot.

Bolivia La Paz has a gentle, chocolatey character with a tea-like lightness. Chocolate sweetness forms the base, while apple and apricot bring a touch of fruit freshness. Its acidity is mild and never dominates the cup.

Roasted for espresso, it brings chocolate sweetness to the foreground. Roasted for filter, it reveals more of its tea-like lightness and subtle apple and apricot notes. Both roasts retain the coffee’s balanced character.

How to brew coffee using the V60 method

Dose: 18–20 g · Water: 300 g at 90–96°C · Grind size: 24–27 clicks on a Comandante grinder · Brew time: approx. 3 minutes

  1. Rinse the filter with hot water, then discard the rinse water from the server.
  2. Add the ground coffee.
  3. Start the timer and pour in 60 g of water. Stir gently and wait for 30 seconds.
  4. Continue pouring every 30 seconds, reaching a total weight of: 120 g, 180 g, 240 g and finally 300 g.
  5. The total brew time should be approximately 3 minutes.
