Ethiopia Buncho is a specialty coffee crafted for filter brewing, showcasing the remarkable potential of the high-altitude coffee farms of Sidama and the honey processing method. Grown at elevations of over 2,200 metres above sea level, the cherries mature slowly, developing exceptional clarity, elegance and complexity in the cup.

Expect delicate notes of black tea, orange, lemon and jasmine. Roasted specifically for filter methods, this coffee reveals its character through a slow, mindful brew, allowing each layer of flavour and aroma to unfold naturally. The illustration on the package depicts a quiet encounter between a person and a leopard—a symbol of mindfulness, harmony with nature and mutual respect. The coffee comes from the Sidama region, from the town of Shantawene – an area known for its lush vegetation, humid climate, and exceptionally high altitudes. Coffee bushes grow at an altitude of 2,260–2,360 meters above sea level, where cooler temperatures allow the fruit to slowly ripen and develop a complex flavor profile.

The raw material is supplied by approximately 940 local farmers working with Buncho Station, located near Gatta Farm and a distinctive waterfall that influences the local microclimate. Fertile soils and stable climatic conditions create the ideal environment for growing coffee of exceptional quality.

Buncho is processed using the honey method with the help of an eco-friendly Panagos depulper, designed to significantly reduce water consumption. After the skin is removed, a layer of fruit mucilage remains on the beans, enhancing their natural sweetness and depth while preserving exceptional clarity and elegance in the cup.

Every stage of the process is carefully managed with respect for the environment. Organic by-products are composted and returned to the land, combining traditional coffee processing with a thoughtful, sustainable approach to farming.

In the cup, Shantawene Buncho is beautifully clean, elegant and layered. Delicate black tea forms the foundation of the profile, bringing a refined floral character and remarkable clarity. Bright notes of lemon and orange add vibrant citrus freshness without overpowering the cup, while jasmine lingers gently in both the aroma and finish, giving the coffee its unmistakably Ethiopian character. The result is a balanced, expressive cup with a long, refined finish.

Roasted specifically for filter brewing, this coffee is designed to showcase the full potential of its high-altitude origin and honey processing. It shines in manual brewing methods such as V60, Chemex or Kalita, where its delicate aromas and layered structure can unfold slowly, one sip at a time.

How to brew coffee using the V60 method

Dose: 18–20 g · Water: 300 g, 90–96°C · Grinding: 24–27 clicks (Comandante) · Brewing time: approx. 3:00 min

  1. Rinse the filter with hot water, discard the rinse water
  2. Add ground coffee
  3. Pour 60 g of water, start the timer, stir, wait 30 seconds
  4. Continue pouring every 30 s: 120 g, 180 g, 240 g, 300 g
  5. Total brew time should be around 3 minutes.
