Rwanda Gitoki, our coffee of the month for May — a coffee that shows Rwanda at its best: juicy, clean, and naturally elegant in flavor.

Sourced from over 1,100 local farmers in the Gatsibo District, this lot combines the precision of the fully washed process with the refined character of the Red Bourbon variety, resulting in a clean, structured, and expressive cup. The profile opens with bright citrus freshness and juicy grapefruit notes, flowing into the sweetness of dried apricot and finishing with a soft nougat-like smoothness. It’s a highly balanced coffee – crisp and light as a filter brew, creamier and sweeter as espresso. A coffee you return to not because it surprises you, but because it delivers pure drinking pleasure every time.

Rwanda Gitoki specialty coffee by JAVA Coffee Roasters served as espresso

A coffee that gives a lot from the very first sip – freshness, sweetness, and balance that quickly becomes something you want to come back to.

Gitoki Processing Station in the Gatsibo Region, Rwanda

Rwanda Gitoki comes from eastern Rwanda, in the Gatsibo District — a coffee-growing region that, until recently, lacked its own coffee processing infrastructure. For years, local farmers had to transport freshly harvested coffee cherries over long distances, increasing the risk of quality loss before processing even began. The opening of the Gitoki washing station in 2020 changed this process, allowing quality to be preserved much closer to the source. Today, the station works with more than 1,100 local farmers, organizing cherry collection and processing in one place, giving better quality control and unlocking the full potential of the region.

Manual selection of grains at the Gitoki station - one of the key stages

This lot is a classic example of Rwandan coffee at its best — the Red Bourbon variety and fully washed process create a clean, structured, and elegant cup profile. Grown at an altitude of 1500–1800 MASL, the slower cherry maturation allows the beans to develop greater flavor concentration, better structure, and natural juiciness. It’s a coffee that clearly shows how important both growing conditions and precise processing are in shaping the final cup.

Rwanda Gitoki is a cup full of juiciness, clarity, and natural elegance — everything you would expect from a well-crafted Rwandan coffee. From the very first sip, bright citrus notes and juicy grapefruit bring freshness and energy to the cup. As it develops, the profile moves into the sweetness of dried apricot, creating a softer, fruit-driven center, while a delicate nougat finish lingers pleasantly on the palate.

As espresso, Rwanda Gitoki becomes more compact, creamy, and sweeter, with a more pronounced structure and a heavier body. As a filter brew, it opens up beautifully, showing more clarity, lightness, and fruit transparency. No matter the brewing method, it keeps its balance and character, combining vibrant freshness with natural, well-structured sweetness.
