Information about the farm and the process

La Laja is a coffee company that works with small producers. It is located in the south of Mexico. It currently manages three mills located in three regions: Puebla, Veracruz and Chiapas.

La Laja is certified by the Rainforest Alliance, UTZ (a sustainability certification programme for coffee, cocoa and tea) and 4C (a certification that promotes a sustainable coffee supply chain and improved living standards for farmers). The company has also developed socio-economic programmes, including the production of seedlings that are provided to producers, trainings, credits and opportunities to participate in coffee production/processing.

La Laja also supports the local community, organising recreational activities so that the most disadvantaged can grow and educate themselves.

Our Nahua coffee comes from three farms - Finca Husmaya, managed by Rodolfo Carcamo Galindo, Finca La Puebla, managed by Nicolas Martinez Almanza, and La Nueva, managed by Juan Manuel Chacon. Each farm has a permanent staff of around 20 people who maintain the crops, fertilise the soil and restore the oldest plots. They use a fertiliser made from cascara.

Jest bardzo dobra. Co prawda szukam jeszcze grejpfruta więc kombinuję z przepisem w V60 żeby go znaleźć. Kawka jest pyszna i 100% gwarantuje pyszne, energetyzujące doznania za każdym parzeniem. Nawet w porannym pośpiechu jako "zalewajka" jest znakomita, co wcale nie jest takie oczywiste.

Zwiewna elegancka, słodka i uniwersalna.

Elegancka, pozbawiona goryczy słodka kawa z minimalną kwasowością, dość ciemno wypalona. Profil aromatyczny zgadza się z opisem, ewidentnie wyczuwalne grejpfrutowe i żurawinowe słodkie nuty zaokrąglone czekoladą. Kawa pomimo swojego zwiewnego delikatnego charakteru pozostawia długi posmak złożony ze wszystkich wymienionych wyżej aromatów, nawet wypita w postaci przelewu. Wychodzi świetna z V60 jak i Greckiej Briki gdzie nabiera pełnie cielistości, będzie z niej świetne słodkie espresso. Na 100gr. znalazłem pięć uszek słonia i jeden quaker.
