August at a slower pace – coffee for moments without hurry

Our August Coffee of the Month was created for moments that don’t need to be rushed. A deck chair, a hammock, plenty of greenery and a cup of great coffee – the laid-back summer scene on the label perfectly captures the character of Colombia Manos Juntas Natural. This coffee takes us to the Cauca region, where freshly harvested coffee cherries from local farms are delivered to Manos Juntas Micromill. Through carefully controlled fermentation and slow drying inside the whole fruit, the beans develop an intensely sweet and beautifully balanced character. In the cup, expect juicy cranberry, dark chocolate and the pleasant sweetness of ripe grapes.

Detailed quality control of each batch

Manos Juntas Micromill, operated by export partner Banexport, is located near Popayán in Cauca – one of Colombia’s most highly regarded coffee-growing regions. The coffee trees grow at elevations of 1,400–2,000 metres above sea level, where the cooler climate, mountainous terrain and fertile soils allow the cherries to ripen slowly.

The Manos Juntas model is built around collaboration with local producers. Farmers focus on caring for their coffee trees and harvesting ripe cherries, while the micromill team manages the entire processing stage in one central location. This means producers are paid immediately after harvest, while every lot remains fully traceable throughout the process.

Freshly harvested coffee cherries before fermentation

Once delivered to the micromill, the freshly harvested cherries are carefully assessed by measuring their Brix and pH levels. They are then placed in sealed tanks for five days of anaerobic fermentation. Each tank is labelled with the producer’s name, ensuring full traceability throughout the process.

After fermentation, the coffee remains inside the whole cherries and is naturally dried on covered raised beds for approximately 30–45 days. This carefully controlled fermentation and slow drying process develops an intense sweetness and a deep flavour profile with notes of cranberry, dark chocolate and ripe grapes.

Colombia Manos Juntas Natural shows from the very first sip just how much a carefully managed natural process can bring to the cup. Juicy cranberry adds a pleasant fruity brightness, balanced by the depth of dark chocolate. A distinct grape-like sweetness brings everything together, creating a cup that is full, juicy and remarkably enjoyable.

As an espresso, it stands out with its creamy texture, intense sweetness and chocolate finish. Brewed as a filter, it reveals more fruity nuances and a lighter character while remaining beautifully balanced. This is a coffee that expresses its distinctive character across different brewing methods.
