It's worth remembering that this substance may still occur in small amounts in decaffeinated beans. Currently, European standards permit caffeine content in such coffee at levels of 0.1%–0.3% compared to the initial amount. The Decaffeination Process
Decaffeination occurs after sorting the beans, which must be properly prepared for processing and require steaming for half an hour. The next step involves steaming under low pressure, which aims to open the coffee's pores and allow for caffeine extraction. The beans are then immersed in a solution of water and ethyl acetate (a compound that occurs naturally) along with a solvent produced through the fermentation of sugar cane. After immersing the green coffee in this solution, caffeine naturally binds with the salts of chlorogenic acids. This process allows for caffeine extraction. Once the coffee is saturated, the tank is emptied, and fresh solution is introduced. After about 8 hours, the remaining caffeine is removed. The beans are then taken out of the solution and subjected to final steaming under low pressure to eliminate any remaining ethyl acetate. The resulting decaf coffee is dried and physically polished before it can be packaged for transport.
